Bienenstich (Ute)

Coconut Cake Recipe

Ingredients:

  • 3 cups of flour
  • 2 cups of brown sugar
  • 1 cup of buttermilk (or soy milk)
  • 4 eggs
  • 1 pack of baking powder
  • 1 cup of shredded coconut

For the topping:

  • 1 cup of heavy cream (200 g)
  • 1 stick of butter (not 4 sticks! 1 stick ≈ 113 g)
  • 1 tablespoon of honey

Instructions:

1️⃣ Prepare the Batter

  • Mix the eggs with sugar and a little vanilla extract until it forms a brown-yellow creamy mixture.
  • Stir in the milk and baking powder into the cream.
  • Gradually mix in the flour until you get a smooth batter.

2️⃣ Prepare the Baking Sheet

  • Line a baking sheet with parchment paper and spread the batter evenly.
  • Sprinkle 1 cup of shredded coconut on top.

3️⃣ Bake the Cake

  • Fan oven: 150°C (300°F)
  • Regular oven: 180°C (350°F)
  • Bake for about 20 minutes, but check regularly.
  • The surface should turn light golden brown when it's ready.

Prepare the Topping

4️⃣ Melt the Butter Mixture

  • Melt 1 stick of butter in the microwave for 90 seconds until liquid.
  • Mix in the heavy cream and honey.

5️⃣ Soak the Cake

  • Pour the butter-cream-honey mixture over the hot cake.
  • Use a fork to poke holes into the cake so that the liquid can soak into the sponge.
